What to do with all those wonderful zucchini… You know, those plants in the back of your garden, shading everything out, firing green torpedoes at you faster than you can think about? And if you enjoyed a few days away last weekend, well your new bass boat is waiting back there now. All you need is a spoon, I hope you like green!
One option is to grill them (sliced and bathed in olive oil and rosemary). Or you can roast the boats with some yummy filling. Zucchini bread is good, as is chocolate zucchini cake. But you probably will get tired of them way before you run out. This year we are shredding and freezing. We will also be pureeing and freezing some for soup additive.
